
Sorachi Ace- This variety is 9.7% Alpha Acids and is the epitome of hops when it comes to Rice Lagers and for very good reason. This variety was created specifically for Sapporo in the 1980s.
This variety is primarily a lager hop, not to say it couldn’t be used in ales. Its spriciness, lemon, dill and even coriander, at times, is unique to Sorachi Ace. I think this variety is under utilized and over looked when people are choosing a good lager hop.
If you’re looking for an easy Rice Lager Recipe- look no further. While not traditional, it’ll get you pretty close to the real deal.
66% Pilsner Malt (I prefer Montanacraftmalt Bavarian Pilsner)
33% Flaked Rice
Mash at 150°f for 60 mins
Hops
16 IBU Sorachi Ace at 60 mins
10 IBU Sorachi Ace at 30 mins
Ferment with Safale 34/70 for 2 weeks at 56°f for 2 weeks then cold crash and store for 6 weeks at cold temps.
OG: 1.047
FG: 1.011
ABV: 4.7%
