Eclipse | Hop Sensory Analysis With Oil Creek Brewing

Australian grown Eclipse should be on your list of hops to use. This hop gives aromas of orange candy and freshly sliced orange rind. Flavors from this variety are pineapple, as you’d expect in an Australian variety as well as sweet fruit and mandarin oranges. It’s a descendant of high-alpha Australian hops crossed with an Australian wild male

This variety boasts 18% Alpha Acids! It is fantastic in a hazy IPA, but I wouldn’t hesitate to use it in a pale ale or even a lager. I think it’d make for an interesting fruited sour dry hop too!
