
One thing I’ve wanted to do was take two of the same varieties, grown in different regions, and compare them.
First, U.S. Saaz is 4.3% AA which gives you more overall bitterness and more fruitiness. Czech grown Saaz is more traditional and a true noble hop at 2.4% AA. It offers that floral, sharp bitterness while the U.S. variety is fruity with a hint of cherry.
It’s subtle for sure, but if you’re looking for authenticity, go for the Czech variety. If you’re wanting to use less hops while still keeping that bitterness, go with the U.S. variety. It was a lot of fun comparing these varieties.
