Brewer Notes
This batch was one of those brews that just went right from start to finish. Kettle to taps in 7 days, which is the fastest I have ever turned a beer around. The yeast was some of the healthiest I have ever seen and I think that had everything to do with how well it came out.
I went with S-04 and it was the right call. The fruity esters it throws are exactly what you want in a British ale. That is the thing I love most about this style. It is smooth and incredibly drinkable even with some strong flavor going on, and I really do think the yeast deserves most of the credit for that. S-04 just does something special in a beer like this.
